April 13 is Make Lunch Count Day, so this week’s GoalChat was on the topic of Lunch. Chef Marisa Baggett, Dr. Beth Ricanati, challah baker, and Jessie-Sierra Ross, StraighttotheHipsBaby.com are all authors, as well as advocate for taking time to eat. Breakfast is “the most important meal of the day” and dinner is when people come together, so lunch often gets pushed aside. Not anymore.
Marisa, Beth, and Jessie-Sierra shared their lunch aha moments, favorite lunches, and best lunch tips. Spoiler alert – they each love lunch in bowls, whether it’s soup, salad, or another kind of bowl of deliciousness. Dig in. It’s a fabulous conversation.
What Makes Lunch Special
- Beth: Not only the food, but taking the time to eat. It’s an opportunity to eat the rainbow
- Jessie: Lunch is a time you can block off every day; make real food, eat real food
- Marisa: For most of her career, it was not a thing. Now, it’s non-negotiable; lunch needs to be special and served/eaten in something pretty
How to Take Back Lunch
- Marisa: People are always surprised when it’s time for lunch. Remember, it’s coming every day. Have a plan
- Jessie: Think of lunch and lunch break as an extension of self-care
- Beth: A lot of people think they are not a lunch person, you can learn to be. Take a step at a time.
- Beth: Find your hacks
- Marisa: Take away the things that make cooking difficult
- Jessie-Sierra: Think simply – simple ingredients, good flavors

- Marisa: Have an intention with lunch; Start with something your really love. When you order your favorite food for dinner, get a second one, so you have lunch the next day.
- Beth: Decide to block out time for lunch, start with 5 minutes – longer is better; most things can wait til you are done eating
- Jessie-Sierra: Find inspiration for recipes; flip through your favorite foodies IGs and their cookbooks
Final Thoughts
- Marisa: Just try preparing and enjoying lunch. And if you mess up a little – or a lot – it’s okay.
- Jessie-Sierra: Embrace small ways to elevate your lunch. Fancify it by adding fresh herbs and edible flowers
- Beth: Eat lunch. Just do it
